- Preheat oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.
- Heat a skillet over medium heat and sauté the onion and bell pepper for about 5 minutes until softened. Add the garlic and cook for 30 seconds. Remove from the heat and let cool slightly.
- In a large mixing bowl, combine the ground beef, breadcrumbs, eggs, milk, sautéed vegetables, salt, black pepper, Worcestershire sauce, and Italian seasoning. Mix gently until just combined.
- Shape the mixture into a loaf and place it into the prepared loaf pan or onto the baking sheet. Do not over-pack the meat.
- Bake for 40 minutes.
- Remove the meatloaf from the oven and evenly sprinkle the shredded cheese over the top. Add the sautéed onions if using.
- Return to the oven and bake for another 10–15 minutes, or until the cheese is melted, bubbly, and lightly golden and the internal temperature reaches 160°F (71°C).
- Let the meatloaf rest for 10 minutes before slicing.
- Garnish with chopped parsley and serve warm.

Sautéing the vegetables first adds sweetness and keeps the meatloaf moist.
