- Prepare the Ingredients
- Lay the tortillas on a clean work surface.
- Shred the mozzarella if using a block of cheese.
- Prepare any additional toppings you plan to use.
- Assemble the Quesadillas
- Spread 2–3 tablespoons of pizza sauce over one tortilla.
- Sprinkle half of the mozzarella cheese evenly over the sauce.
- Arrange the pepperoni slices on top.
- Add a little more mozzarella cheese to help hold the filling together.
- Place a second tortilla on top and gently press down.
- Repeat with the remaining tortillas and filling.
- Cook the Quesadillas
- Heat a large non-stick skillet over medium heat.
- Melt 1 tablespoon butter or add 1 tablespoon olive oil.
- Carefully place one assembled quesadilla into the skillet.
- Cook for 3–4 minutes until the bottom is crispy and golden brown.
- Flip carefully with a large spatula.
- Cook for another 2–3 minutes until the second side is golden and the cheese has completely melted.
- Repeat with the second quesadilla.
- Slice & Serve
- Transfer the cooked quesadillas to a cutting board.
- Let them rest for 1–2 minutes before slicing.
- Cut into wedges using a sharp knife or pizza cutter.
- Sprinkle with Italian seasoning and chopped parsley if desired.
- Serve immediately with warm pizza sauce or marinara for dipping.
Notes
- Spread only a thin layer of pizza sauce to prevent soggy tortillas.
- Mozzarella provides the classic stretchy cheese texture, but provolone or cheddar also work well.
- Cook over medium heat so the cheese melts before the tortillas become too dark.
- Butter creates a richer, crispier crust, while olive oil offers a lighter option.
