- Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
- In a large mixing bowl, combine the thawed hashbrowns, cream of chicken soup, sour cream, melted butter, cheddar cheese, mozzarella (if using), diced onion, garlic powder, salt, and black pepper. Stir until everything is evenly combined.
- Spread the potato mixture evenly into the prepared baking dish.
- In a separate bowl, mix the crushed cornflakes with the melted butter until coated. Sprinkle the topping evenly over the casserole. Add the remaining cheddar cheese over the top if desired.
- Bake for 45–50 minutes, or until the casserole is hot and bubbly and the topping is golden brown and crispy. If the topping browns too quickly, loosely cover with foil during the last few minutes of baking.
- Remove from the oven and let the casserole rest for 10 minutes before serving.
- Serve warm with roast chicken, turkey, ham, pork chops, meatloaf, or your favorite holiday meal.
