Method
- Prepare the Meat Sauce
- Preheat the oven to 375°F (190°C).
- In a large skillet over medium heat, cook the ground beef until browned. Drain excess grease.
- Add the diced onion and cook for 3–4 minutes until softened.
- Stir in the minced garlic and cook for 30 seconds.
- Add the diced tomatoes, tomato sauce, beef broth, black beans, corn, chili powder, smoked paprika, cumin, salt, pepper, and red pepper flakes.
- Simmer for 10–15 minutes until the sauce thickens slightly.
- Assemble the Lasagna
- Grease a 9×13-inch baking dish.
- Spread a thin layer of meat sauce over the bottom.
- Add a layer of lasagna noodles.
- Spread more meat sauce over the noodles.
- Sprinkle with cheddar and mozzarella cheese.
- Repeat the layers until all ingredients are used, finishing with the remaining sauce and cheese on top.
- Bake
- Cover loosely with foil.
- Bake for 30 minutes.
- Remove the foil and bake for an additional 15–20 minutes, or until the cheese is melted, bubbly, and lightly golden.
- Let the lasagna rest for 10 minutes before slicing and serving.
