- Prepare the Aromatics
- Heat the olive oil or butter in a small skillet over medium heat. Add the diced onion and cook for about 4–5 minutes until softened. Stir in the minced garlic and cook for another 30 seconds until fragrant. Remove from the heat and allow the mixture to cool.
- Prepare the Meatloaf Mixture
- In a large mixing bowl, combine the ground beef, ground pork, Parmesan cheese, breadcrumbs, milk, eggs, Italian seasoning, salt, and black pepper. Add the cooled onion and garlic mixture. Mix gently until just combined without overmixing.
- Shape the Meatloaf
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan. Shape the meat mixture into a loaf and place it on the prepared pan.
- Bake
- Bake for 45–55 minutes, or until the internal temperature reaches 160°F (71°C) and the outside is golden brown.
- Rest
- Remove the meatloaf from the oven and let it rest for 10 minutes before slicing.
- Make the Garlic Parmesan Sauce
- While the meatloaf rests, melt the butter in a saucepan over medium heat. Add the minced garlic and cook for 30 seconds. Stir in the flour and cook for 1 minute. Slowly whisk in the milk or heavy cream until smooth. Simmer until slightly thickened, then stir in the Parmesan cheese, salt, and black pepper until creamy.
- Serve
- Slice the meatloaf and generously spoon the warm Garlic Parmesan Sauce over each serving. Garnish with chopped fresh parsley and serve immediately.
Notes
Freshly grated Parmesan melts more smoothly and provides the best flavor.
