- Heat a skillet over medium heat. Add the ground beef and cook, breaking it apart, until fully browned. Drain any excess grease.
- Season the beef with salt, black pepper, garlic powder, and onion powder. Stir in the ketchup and mustard, if using, and cook for another minute. Remove from heat and let cool before assembling the bombs. Once cooled, mix in the shredded cheese.
- Preheat the oven to 375°F (190°C) and line a baking tray with parchment paper or grease it. Divide the biscuit or pizza dough into small pieces and roll each into a circle about 4 inches across.
- Spoon a generous amount of the beef and cheese filling into the center of each dough circle, being careful not to overfill. Fold the edges up and around the filling, pinching to seal into a ball. Place seam-side down on the prepared baking tray.
- In a small bowl, mix the melted butter with minced garlic. Brush generously over the tops of the dough balls, then sprinkle with grated Parmesan and a bit of parsley.
- Bake for 15–20 minutes, until golden brown and cooked through, with a crisp, glossy top. Let cool slightly before serving, as the filling stays very hot.
Notes
Chill the filling before assembling — it's less messy to work with and helps prevent the dough from tearing.
Seal the dough tightly around the filling to avoid cheese leaking out during baking.
Space the bombs apart on the tray so they bake evenly instead of steaming.
