Method
- Cut mozzarella sticks in half if smaller portions are desired. Place cheese pieces on a tray and freeze for a minimum of 30 minutes. Freezing prevents the cheese from melting too quickly during frying.
- Place Doritos in a food processor and pulse until fine breadcrumb-like crumbs form. Transfer to a shallow dish.
- Set up a breading station with three bowls. In the first bowl mix flour, paprika, black pepper, and garlic powder. In the second bowl whisk eggs with milk. In the third bowl place the crushed Doritos crumbs.
- Remove cheese from the freezer. Roll each piece in the flour mixture, dip into the egg wash, then press firmly into the crushed Doritos. Repeat the egg wash and Doritos coating a second time for a thicker crispier shell that prevents cheese leaking.
- Heat oil in a deep pan to 350°F (175°C). Carefully lower coated cheese pieces into the hot oil in small batches and fry for 1 to 2 minutes until golden brown. Do not overcrowd the pan.
- Remove with a slotted spoon and drain on paper towels. Serve immediately while the cheese is hot and stretchy with your choice of dipping sauce.
Notes
Always freeze the cheese for at least 30 minutes before frying — this is the most important step to prevent the cheese from bursting out.
Double coat every piece for a thicker crunchier shell and to seal the cheese inside properly.
Maintain oil temperature at 350°F throughout — too hot burns the coating, too cold causes the cheese to leak out.

For a lighter version air fry at 375°F (190°C) for 5 to 7 minutes sprayed lightly with cooking spray.
