Ingredients
Method
- Mix the Dry Ingredients
- In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt until well combined.
- Mix the Wet Ingredients
- In another bowl, whisk together the milk, egg, melted butter (or oil), and vanilla extract until smooth.
- Make the Batter
- Pour the wet ingredients into the dry ingredients.
- Stir gently until just combined.
- Do not overmix; a few small lumps are perfectly fine.
- If the batter is too thick, add 1–2 tablespoons of milk.
- Fold in Chocolate Chips
- Gently fold the chocolate chips into the batter.
- Let the batter rest for 5–10 minutes.
- Heat the Pan
- Heat a lightly greased non-stick skillet or griddle over medium-low heat.
- Cook the Pancakes
- Scoop about ¼ cup batter onto the skillet for each pancake.
- Cook for 2–3 minutes until bubbles appear and the edges begin to set.
- Flip carefully.
- Cook another 1–2 minutes until cooked through.
- Serve
- Stack the pancakes.
- Top with chocolate syrup, maple syrup, whipped cream, berries, or your favorite toppings.
- Serve immediately while warm.
Notes
Resting the batter creates lighter, fluffier pancakes.
Avoid overmixing to keep the pancakes soft and airy.
Medium-low heat prevents the cocoa from burning.
For extra chocolate flavor, add ½ teaspoon espresso powder.
Buttermilk can replace whole milk for an even softer texture.
Freeze leftovers between sheets of parchment paper for easy reheating.
