- Prepare the Filling
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Heat the olive oil in a skillet over medium heat.
- Sauté the onion for 2–3 minutes until softened.
- Add the garlic and cook for 30 seconds.
- Stir in the spinach and cook just until wilted.
- Remove from the heat and let the mixture cool slightly.
- Mix in the crumbled feta cheese, oregano, salt, and black pepper.
- Assemble the Pastries
- Roll out the thawed puff pastry on a lightly floured surface.
- Cut into 8 equal squares.
- Place about 1 tablespoon of the spinach and feta filling in the center of each square.
- Fold each square into a triangle or rectangle and press the edges with a fork to seal.
- Brush the tops with the beaten egg.
- Cut a small slit in each pastry to allow steam to escape.
- Bake
- Arrange the pastries on the prepared baking sheet.
- Bake for 18–20 minutes, or until puffed and golden brown.
- Let cool for about 5 minutes before serving.
Notes
- Keep the puff pastry cold until ready to use for the flakiest texture.
- Avoid overfilling to prevent the pastries from bursting during baking.
- Freshly crumbled feta provides the best flavor.
- Frozen spinach can be used if thawed and thoroughly squeezed dry.
- Add chopped herbs such as parsley or dill for extra freshness.
