- Prepare the creamy filling
- Add the softened cream cheese, mayonnaise, lemon juice, garlic powder, onion powder, paprika, black pepper, and salt to a mixing bowl. Mix until smooth and creamy.
- Add the chicken and vegetables
- Add the shredded chicken, cheddar cheese, red bell pepper, green bell pepper, green onions, and fresh parsley or cilantro. Stir until everything is evenly combined.
- Prepare the tortillas
- Place a flour tortilla on a clean work surface. If the tortilla feels stiff, warm it briefly until soft and flexible. Spread an even layer of the filling over the tortilla, leaving a small border around the edges.
- Roll the tortillas
- Fold the sides slightly inward, then roll the tortilla tightly from the bottom. Keep the filling tucked inside as you roll.
- Chill the rolls
- Wrap the completed tortilla rolls tightly and refrigerate for about 30 minutes. Chilling helps the filling firm up and makes the rolls easier to slice.
- Slice and serve
- Using a sharp knife, cut each roll into approximately 1 to 1 1/2-inch pieces. Arrange the tortilla rolls on a serving platter and serve with ranch dressing, salsa, garlic sauce, or your favorite dip.
