Method
- Prepare the Chicken Wings
- Pat the chicken wings completely dry with paper towels. Place them in a large bowl and toss with the baking powder, salt, black pepper, paprika, garlic powder, and onion powder until evenly coated.
- Cook the Wings
- Oven Method
- Preheat the oven to 425°F (220°C).
- Line a baking sheet with foil and place a wire rack on top.
- Arrange the wings in a single layer.
- Bake for 40–45 minutes, flipping halfway through, until golden brown and crispy.
- Air Fryer Method
- Preheat the air fryer to 400°F (200°C).
- Arrange the wings in a single layer.
- Air fry for 18–22 minutes, turning halfway through cooking.
- Deep-Frying Method
- Heat oil to 350°F (175°C).
- Fry the wings in batches for 8–10 minutes, until crispy and fully cooked.
- Drain on paper towels.
- Make the Cowboy Butter Sauce
- In a small saucepan over low heat, melt the butter. Stir in the minced garlic and cook for about 30 seconds until fragrant.
- Add the Dijon mustard, lemon juice, lemon zest, smoked paprika, and cayenne pepper. Stir until well combined, then remove from the heat. Mix in the parsley and chives, and season with salt and black pepper to taste.
- Toss and Serve
- Transfer the hot cooked wings to a large bowl. Pour the warm cowboy butter sauce over the wings and toss until evenly coated. Serve immediately while hot and crispy.
