Ingredients
Method
- Prepare the Chocolate Crepe Batter
- Add the eggs and sugar to a mixing bowl and whisk until smooth.
- Sift the cake flour and cocoa powder into the bowl.
- Gradually whisk the dry ingredients into the egg mixture.
- Slowly add the milk while whisking until the batter is smooth and thin.
- Add the cooking oil and whisk until fully combined.
- Let the batter rest for 10–15 minutes.
- Cook the Crepes
- Heat a nonstick skillet over medium-low to medium heat.
- Lightly grease the pan if needed.
- Pour a small amount of batter into the center of the pan.
- Quickly tilt and rotate the pan to spread the batter into a thin layer.
- Cook until the edges begin to loosen and the surface is set.
- Carefully flip and cook the other side briefly.
- Transfer to a plate and repeat with the remaining batter.
- You should get approximately 8–10 thin chocolate crepes.
- Make the Oreo Filling
- Pour the heavy cream into a chilled mixing bowl.
- Add the sugar.
- Whip until thick and fluffy.
- Gently fold in the crushed Oreo cookies.
- Avoid overmixing to keep the filling light and creamy.
- Assemble the Crepes
- Place one chocolate crepe on a clean surface.
- Spread a layer of Oreo cream over the crepe.
- Sprinkle with additional crushed Oreos if desired.
- Carefully roll the crepe into a tight log.
- Repeat with the remaining crepes.
- Garnish with crushed Oreos and chocolate sauce before serving.
- Serve chilled for the best texture.
Notes
- Keep the crepe batter thin for soft, delicate crepes.
- Cook over moderate heat to prevent the cocoa from burning.
- Don't overcook the crepes or they may become difficult to roll.
- Allow the crepes to cool slightly before adding the whipped cream.
