- Cook the chicken:
- Heat olive oil in a large skillet or wok over medium-high heat. Add the chicken pieces and season with black pepper. Cook until golden and completely cooked through. Remove the chicken and set aside.
- Sauté the aromatics:
- Using the same pan, add the sliced onion and minced garlic. Cook for about 1–2 minutes until fragrant and slightly softened.
- Cook the vegetables:
- Add the chopped zucchini and yellow bell pepper. Stir-fry for 3–4 minutes, until the vegetables are tender but still slightly crisp.
- Prepare the sauce:
- In a small bowl, whisk together soy sauce, oyster sauce, honey, and red pepper flakes.
- Combine:
- Return the cooked chicken to the pan. Pour the sauce over the chicken and vegetables and toss well. Cook for another 2–3 minutes until everything is evenly coated and heated through.
- Garnish and serve:
- Turn off the heat and sprinkle with chopped green onions. Serve immediately with rice, noodles, or enjoy on its own.
Notes
- Cut the chicken into evenly sized pieces for consistent cooking.
- Don't overcook the zucchini; it should remain slightly tender and crisp.
- Oyster sauce can be omitted if desired.
- Add extra red pepper flakes for a spicier stir fry.
- Broccoli, mushrooms, carrots, snap peas, or cabbage can be added for additional vegetables.
- Serve with steamed white rice, brown rice, or noodles.
