- Prepare the Vegetables:
- Heat olive oil in a large skillet over medium heat.
- Add the sliced onion and bell pepper.
- Cook for 5–7 minutes, stirring occasionally, until softened and lightly caramelized.
- Add the minced garlic.
- Cook for 30 seconds until fragrant.
- Remove the vegetables from the skillet and set aside.
- Cook the Beef:
- Add the thinly sliced beef to the same skillet.
- Season with salt, black pepper, and paprika.
- Cook for 3–5 minutes, stirring occasionally, until browned and cooked through.
- Combine the Filling:
- Return the cooked onions and peppers to the skillet.
- Stir everything together.
- Cook for 1 minute to blend the flavors.
- Remove from the heat.
- Assemble the Quesadillas:
- Place one tortilla on a clean work surface.
- Sprinkle a layer of shredded mozzarella and provolone over one half.
- Add a generous scoop of the beef mixture.
- Top with another layer of cheese.
- Fold the tortilla in half.
- Repeat with the remaining tortillas.
- Cook the Quesadillas:
- Heat a clean skillet over medium heat.
- Lightly grease the skillet with butter or oil.
- Place one quesadilla in the skillet.
- Cook for 2–3 minutes until golden brown.
- Carefully flip.
- Cook another 2–3 minutes until crispy and the cheese has fully melted.
- Repeat with the remaining quesadillas.
- Slice and Serve:
- Transfer the cooked quesadillas to a cutting board.
- Let them rest for 1 minute.
- Slice each quesadilla into wedges.
- Garnish with chopped parsley if desired.
- Serve hot with salsa, sour cream, guacamole, or queso dip.

Freeze the steak for 20–30 minutes before slicing to make it easier to cut thinly.
