Method
- In a large mixing bowl, combine the mashed potatoes, egg, flour, milk, salt, and black pepper until smooth.
- Fold in the shredded cheese, green onions, and any optional add-ins such as bacon, Parmesan cheese, herbs, garlic powder, or paprika. Mix until evenly combined. If the mixture feels too soft, add a little extra flour.
- Using a small cookie scoop or tablespoon, portion the mixture and roll it into bite-sized balls. Arrange them on a parchment-lined baking tray.
- Baking Method
- Preheat the oven to 400°F (200°C).
- Lightly spray or brush the potato bites with oil.
- Bake for 20–25 minutes, turning halfway through, until golden brown and crispy.
- Frying Method
- Heat vegetable oil to 350°F (175°C).
- Carefully fry the potato bites in small batches for 2–3 minutes, or until deep golden brown and crispy.
- Transfer to a paper towel-lined plate or wire rack to drain excess oil.
- Serve immediately while hot with your favorite dipping sauces.
Notes
- Cold mashed potatoes hold their shape much better.
- Freshly shredded cheese melts more smoothly than pre-shredded cheese.
- Avoid overmixing to keep the bites light and fluffy.
- Air fry at 375°F (190°C) for 12–15 minutes, shaking halfway through.
