Ingredients
  

  • 2 cups short-grain sushi rice
  • cups water
  • 3 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tsp salt
  • ½ lb fresh salmon skin removed, cubed
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp sriracha adjust to taste
  • 1 tsp garlic powder
  • ½ cup mayonnaise
  • 2 –3 tbsp sriracha
  • 1 tsp soy sauce
  • Furikake seasoning or sesame seeds
  • Chopped green onions
  • Fresh cilantro optional
  • Avocado slices
  • Additional sriracha or eel sauce for serving (optional)
  • Roasted seaweed sheets nori, for serving
  • Cucumber slices or rice crackers for serving

Method
 

  1. Rinse the sushi rice under cold water until it runs clear to remove excess starch. Cook according to package instructions in a rice cooker or on the stovetop.
  2. While the rice is still warm, gently fold in the rice vinegar, sugar, and salt, being careful not to break the grains. Set aside to cool slightly.
  3. Preheat the oven to 375°F (190°C). Cut the salmon into small cubes and place in a bowl. Add soy sauce, sesame oil, sriracha, and garlic powder, stirring gently until evenly coated.
  4. In a small bowl, whisk together the mayonnaise, sriracha, and soy sauce to make the spicy mayo. Taste and adjust seasoning as needed.
  5. Lightly grease a baking dish and spread the sushi rice evenly across the bottom. Sprinkle furikake seasoning or sesame seeds over the rice, then layer the seasoned salmon on top in an even coating. Drizzle or spread the spicy mayo generously over the surface.
  6. Bake for 18–22 minutes, until the salmon is fully cooked and the top is lightly golden. For a crisp top, broil for an additional 2–3 minutes, watching closely to prevent burning.
  7. Remove from the oven and let cool for a few minutes. Garnish with avocado slices, cilantro, and green onions, plus extra sriracha or eel sauce to taste. Serve warm, scooped into nori sheets or alongside cucumber slices.

Notes

Fresh salmon gives the best flavor and texture. Avoid overbaking, since the salmon can dry out quickly. Adjust the sriracha amount to control spice level, or stir in cream cheese for a richer, creamier texture.

  • Avocado slices
  • Additional sriracha or eel sauce( optional)

For Serving

  • Roasted seaweed sheets (nori)
  • Cucumber or Rice crackers.

Instructions:

Step 1: Prepare the Sushi Rice

Wash the sushi rice with cold water until the run is clear thus eliminating starch excess and resulting in right cooking. The rice could be cooked in a rice cooker or on the cooker through the package instructions. In a gentle manner, add in the rice vinegar, sugar and salt when it is warm and mix thoroughly without breaking the grains. Place aside and leave it to cool down a little.

Step 2: Prepare the Salmon

Preheat the oven to 375°F (190 °C). Prepare the salmon in small cubes and put them in a bowl. Add soy sauce, sesame oil, sriracha and a small amount of garlic powder and stir it gently until the salmon is well coated.

Step 3: Make the Spicy Mayo

In a small bowl, mix sriracha, soy sauce and mayonnaise. Add spices and taste to the desired level.

Step 4: Assemble the Sushi Bake

Step 6: Garnish and Serve

Take out of the oven and allow it to cool to a few minutes. Serve topped with slices of avocado, cilantro and green onions. Also add sriracha or eel sauce to taste. It can be served warm by spooning into nori sheets or served with cucumber slices to bring fresh and crispy taste.
